Besan ki Barfi

Hello, 
Today we are going to make Besan ki Barfi.
It is simple to make, a sweet for that we do not need to wait for any festival, we need just Besan, Khoya and Sugar to make it any time. 

Ingredients -

Besan - 150 gm
Ghee - 75 gm
Sugar - 150 gm
Water - half cup
Khoya - 100 gm
Chopped almonds - few no
Cardamom powder - half tsp

Recipe ;

First soak Besan in ghee for about 2 hours.
Now take a pan, keep the stove flame at medium, add Besan ghee mixture in to the pan, and keep pan on stove, roast it till it's color changes to light brown n good smell.
We have to continue stirring so the mixture of Besan n ghee will not stick to the pan. It will take near about 20 minutes.
Now add Khoya to it and roast it for about 2-3 minutes more, switch off the gas.

Now take a plate or tray in which u r going to set ur Barfi, grease it. Take out mixture of roasted Besan n ghee in to the greased plate, keep aside. In pan we will make our sugar syrup. Again switch on stove at medium flame. Put pan. Add sugar n water to it, stir continuously and make 1 tar sugar syrup, make sure it's near about 1 tar not exactly 1 tar, if we keep exactly 1 tar the Barfi will be hard.

After sugar syrup ready, keep aside to be cool, it will take 8-10 minutes, now add cardamom powder to it, mix it, now add Besan Khoya mixture to sugar syrup n mix it properly, when u will see the mixture leaving the pan then take out that mixture to the greased plate, and with the help of ur palm n finger set it in to ur favorite size. Garnish it with chopped almonds.
Keep it aside for about half n hour to set, or if mixture is little bit loose keep it in fridge for about 15 minutes. Now cut in to square or diamond shape with the help of knife.
